> 2 tbsp olive oil
> 2 large ripe mangoes, peeled and cut into spears
> 4 plum tomatoes, halved
> 1/2 cup finely chopped cilantro
> 2 tbsp lemon juice
> 1/2 tsp crushed red pepper
Set grill to medium-high.
Brush the oil on mangoes and tomatoes. Season with salt and pepper. Place both on grill and cook 4–5 min., until slightly charred, turning occasionally.
Let cool slightly and then finely dice. Add to a small bowl and toss with the cilantro, lemon juice, and crushed red pepper. Season with salt and pepper to taste.
