Chicken Caesar Salad with Sweet Potato Croutons

No boring salad here! Roasted chicken breasts, sweet potato croutons, and plenty of chopped kale along with romaine add a flavorful twist to the classic chicken Caesar salad.

Ingredients

> 2 medium sweet potatoes
> 4 tbsp olive oil, divided, plus more for drizzling
> 1/2 cup panko bread crumbs
> 1/3 cup grated Parmesan cheese
> 1 clove garlic, minced
> 1 (1.5 lb) pkg Nature's Promise® Boneless, Skinless Chicken Breasts
> 1 bunch kale
> 2 romaine hearts,, finely chopped
> 1/2 cup Nature's Promise® Organic Caesar Dressing

Preheat oven to 425°F. Line 2 rimmed baking sheets with parchment. Peel the sweet potatoes and cut into 1-inch pieces. In a medium bowl, combine 2 tbsp oil, bread crumbs, Parmesan, and garlic. Add sweet potato cubes, salt, and pepper and toss to combine. Transfer to one prepared baking sheet.

Rub the chicken with remaining 2 tbsp oil and season with salt and pepper. Place on second prepared baking sheet. Place both baking sheets in oven and roast 35–40 min., depending on thickness of chicken, until sweet potatoes are tender and chicken reaches 165°F. Transfer chicken to a cutting board and let rest 5–10 min. Thinly slice chicken.

Meanwhile, rinse the kale and tear leaves from tough stems. Pat kale very dry with paper towels. Add kale to a bowl with a drizzle of olive oil and season with salt. Using clean hands, massage kale 1–2 min., until volume of kale is reduced by about half. To bowl, add the romaine and Caesar dressing. Divide among plates and top with chicken and sweet potato “croutons.” Serve immediately.
