Smashed Southern Potato Salad

Using canned potatoes saves so much time with this delicious and easy Southern side dish.

> 1/2 cup light mayonnaise
> 2 tbsp yellow mustard
> 3 tbsp sweet relish
> 1 tbsp apple cider vinegar
> 4 (15 oz) cans diced white potatoes, drained and rinsed, divided
> 4 Nature's Promise® Organic Hard Cooked Eggs
> 2 celery stalks, diced
> 1/4 cup chopped green onions


In a large bowl, stir the mayonnaise, mustard, relish, and vinegar together to combine. Season with salt and pepper. To bowl, add half of the potatoes. Using a potato masher, lightly smash potatoes.
Roughly chop the eggs and add to bowl, along with the diced celery and remaining potatoes. Season with salt and pepper. Gently toss to combine. Refrigerate until ready to serve. Garnish with the green onions to serve.
