Vegan Dark Chocolate Pudding

Satisfy that chocolate craving with a dairy-free and protein-packed treat. This easy pudding recipe uses maple syrup to sweeten and silken tofu for the creaminess.

Ingredients

> 1 1/4 cups vegan dark chocolate morsels
> 1 (16 oz) pkg silken tofu
> 3 tbsp maple syrup
> 2 tsp vanilla extract
> Coconut whipped topping, to serve (optional)

To a microwave-safe bowl, add the dark chocolate. Microwave 1–2 min. in 30-sec. intervals, until completely melted, stirring between intervals.

To a high-speed blender, add the tofu, maple syrup, and vanilla. Pour melted chocolate in center of blender. Purée 1–2 min., until smooth and creamy, stopping and scraping down sides as needed.

Pour mixture into four 6-oz ramekins or bowls. Refrigerate 2–3 hours, until puddings are set. If desired, top with the coconut whipped topping before serving.
