Ingredients

3/4 cup sugar

2 bunches fresh mint leaves, divided

2 cups Kentucky bourbon

Crushed ice, as needed

Sparkling water, as needed
Steps

To a small saucepan over medium, add the sugar and ¾ cup water. Cook 5 min, until sugar dissolves, stirring gently. Remove from heat. Add 1 bunch mint to pot, making sure mint is submerged in simple syrup. Let steep for at least 1 hour. Strain simple syrup into a resealable jar. Discard used mint leaves.

Separate ½ cup mint leaves from remaining bunch (save any remaining sprigs for garnish). Add mint leaves to a large pitcher; crush leaves with a wooden spoon or cocktail muddler to release the oils and aromas. To pitcher, add 1 cup mint simple syrup and the bourbon, stirring to combine. Add more simple syrup to taste, if desired. Chill until ready to serve.

To serve, fill julep cups or lowball glasses with crushed ice. Add bourbon mixture and top with sparkling water to taste. Garnish with a mint sprig.
Tips
If you don’t have crushed ice, place regular ice cubes in a kitchen towel and smash with a rolling pin or meat mallet. You can also add cubes to a blender and pulse to break up the ice.
