Kale Popcorn

This delectable twist on your favorite movie night snack sneaks in greens in the form of a seasoning powder that will have you reaching for seconds.

> 1/2 lb curly kale, tough stems removed, washed and well dried
> Cooking spray
> 1/4 cup nutritional yeast
> 8 cups plain salted popcorn


Preheat oven to 350°F. Tear the kale into smaller pieces.
Coat 2 rimmed baking sheets with the cooking spray. Arrange kale on prepared pans in a single even layer. Lightly coat kale with the cooking spray and massage into kale. Bake 10–15 min., until crispy but not browned, switching pans on racks halfway through. Season with salt to taste. Cool completely.
In a food processor, pulse the kale until finely ground. Pulse in the nutritional yeast to combine. To a large brown paper bag, add the popcorn and lightly spray it with cooking spray. Sprinkle kale mixture on top and toss vigorously until well coated.


Substitute cooking spray with 2–3 tbsp olive oil to toss with popcorn, if desired.
