Ingredients

> 1 ripe avocado
> 1/4 small red onion
> 1 red apple
> 1 (5 oz) pkg Nature's Promise® Baby Arugula
> 3/4 cup refrigerated sauerkraut
> 2 tbsp olive oil

Peel, pit, and thinly slice the avocado. Thinly slice the onion. Core and thinly slice the apple.

To a large bowl, add the arugula, onion, apple, sauerkraut, and oil. Season with salt and pepper to taste. Toss until combined. Top with avocado and serve immediately.
