10 Things to Do With Leftovers

The friends and family have gone home, the football games have all been watched, and the leftovers are staring you in the face. What are you gonna do? Turn them into the best Thanksgiving leftover dishes ever, that’s what!

Stuffed Panzanella Salad Inspiration 

Spread cubes of leftover stuffing on a sheet pan and toast in a 400°F oven until crisp. Toss with salad greens, halved grape tomatoes, cucumbers, and vinaigrette. 

Cranberry Yogurt Breakfast Cups Inspiration 

Spoon some plain yogurt into a cup. Top with a spoonful of leftover cranberry sauce, fresh blueberries, and sliced almonds.

Mashed Potato Cakes with Smoked Salmon Inspiration 

Shape leftover cold mashed potatoes into cakes. Dip in flour and pan-fry in olive oil until golden brown. Top with slices of smoked salmon, a dollop of sour cream, chopped chives, and a squeeze of lemon. 

Grilled Cheese with Brie and Cranberry Sauce Inspiration 

Spread 2 sourdough bread slices with softened butter. Spread the other side of one slice with leftover cranberry sauce; top with sliced Brie and the remaining bread slice, butter-side up. Cook in a skillet until cheese melts. 

Open Faced Turkey Melts Inspiration

Combine mayo, leftover chopped turkey, chopped celery, and finely chopped red onion. Spoon onto slices of bread. Top each with slice of Cheddar. Broil until cheese melts. 

Pumpkin Pie Milkshakes Inspiration 

In a blender, purée 1 small slice pumpkin pie, 1 cup skim milk, and ¼ cup vanilla ice cream until smooth,

adding more milk if necessary

Turkey Soup Inspiration 

Sauté leftover finely chopped carrots, onion, and celery.  Add low-sodium chicken broth, leftover gravy, and water and heat to simmer. Stir in leftover chopped turkey and simmer until turkey is heated through.

Cranberry Orange Cocktail Inspiration 

In a large cocktail shaker, vigorously shake together ice, leftover cranberry sauce, orange juice, and vodka. Serve on the rocks.

Veggie Sweet Potato Hash Inspiration 

Chop up leftover sweet potatoes and sauté with chopped leftover green beans, Brussels sprouts, and onions in oil until hot. Serve topped with a fried egg. 

Sweet Potato Corn Muffins Inspiration 

Stir ½ cup leftover mashed sweet potatoes into your favorite muffin recipe or packaged mix. Bake according to recipe directions.
