This week’s Savory Sunday meal plan is designed to make the best use of a value pack of affordable, versatile sausage (with one wild card night – this one is tortellini with tuna.) You’ll find easy notes in the instructions of each recipe to tell you how to get started. Get to preppin’ on Sunday, then put your apron away for the rest of the week.

Sausage and Rice Stuffed Portobello Mushrooms  

Portobello caps give this meal a hearty base, and the sausage and brown rice stuffing is a hearty change of pace. Plus, the whole meal is super quick to assemble when you make the filling ahead of time. If you like the basic herb and cream cheese combo, you can swap out different grains, like quinoa or farro.

Sausage French Bread Pizza  

This pizza makes a meal, but you can cut it into wedges and serve as an appetizer or after-school snack. Swipe on pesto instead of tomato sauce for a pop of basil flavor that mingles nicely with sausage spices.

Spiced Eggplant Stew with Sausage   

If you like smoky spices, this Mediterranean-inspired stew just might become a new regular in your recipe rotation. Eggplant is hearty on its own, but when you pair it with Italian sausage and black-eyed peas, you’re talking comfort food. And when it’s quick?
