Baked Cod with Cracker Crumb Topping

Old Bay seasoning and crushed buttery crackers make a delicious topping for fish in a 5-ingredient, one-pan dinner.

Ingredients

> 1 lb fresh or frozen cod thawed (cut into at least 4 pieces)
> 1 lemon
> 1 1/2 tsp Old Bay seasoning
> 15 buttery round crackers
> 3 tbsp butter, melted

Preheat oven to 425°F. Pat the cod fillets dry with paper towels. Place fish in a greased 9x13-inch baking dish. Season with salt and pepper.

Finely grate 1½ tsp zest from the lemon, then cut lemon into wedges. In a resealable gallon-size plastic bag, combine lemon zest, crackers, and Old Bay. Season with salt and pepper. Seal bag. Using a rolling pin or heavy skillet, crush crackers in bag. Transfer cracker crumbs to a medium bowl. Drizzle with the butter and stir until crumbs are evenly moistened.

Divide cracker crumbs among fish and pat gently to help crumbs adhere. Bake 12–15 min., until fish is opaque and crumbs have browned. Serve with lemon wedges.
