1 tsp minced garlic

2 tbsp red wine vinegar

1/2 cup blackberry jam

1 tsp cracked black pepper

1 1/2 lbs pork tenderloin

Preheat oven to 425°F. In a small bowl, combine garlic, vinegar, jam, salt (in moderation), and cracked pepper. Stir until smooth. Place pork in a foil-lined 9x13-inch baking dish and brush with half the blackberry sauce.

Roast pork for 10 min. Brush with remaining sauce. Roast for another 10 min., or until an instant read thermometer reaches 145°F. Remove from oven. Slice and serve.
