4 slices bacon, cut into small pieces

1/2 cup finely chopped onion

1 tbsp minced garlic

2 tbsp course ground mustard

2 tbsp honey

1 cup water

1 (16 oz) bag cut kale greens

Heat a large Dutch oven or pot over medium high heat. Add the chopped bacon, and cook until lightly browned and crisp; about 3-4 minutes.

Add the onion and garlic. Cook for an additional 2-3 minutes stirring occasionally.

Add the mustard, honey and water and mix until well blended. Pour in the kale greens and cover the pot.

Cook for 15-20 minutes, stirring occasionally, or until greens are tender.
