Braised Kale with Bacon and Mustard

Ingredients

> 4 slices bacon, cut into small pieces
> 1/2 cup finely chopped onion
> 1 tbsp minced garlic
> 2 tbsp course ground mustard
> 2 tbsp honey
> 1 cup water
> 1 (16 oz) bag cut kale greens

Steps

Heat a large Dutch oven or pot over medium high heat. Add the chopped bacon, and cook until lightly browned and crisp; about 3-4 minutes.

Add the onion and garlic. Cook for an additional 2-3 minutes stirring occasionally.

Add the mustard, honey and water and mix until well blended. Pour in the kale greens and cover the pot.

Cook for 15-20 minutes, stirring occasionally, or until greens are tender.
