Cajun Fish Sandwiches

Slathered with a homemade roasted red pepper mayo, these quick and easy Cajun flounder sandwiches are perfect for lunch or dinner.

Ingredients

> 1 tbsp canola oil
> 1 1/4 lbs flounder fillets
> 1 tbsp Cajun seasoning blend
> 2 tbsp chopped jarred roasted pepper, rinsed
> 1/4 cup mayonnaise
> 1/2 tsp smoked paprika
> 2 tsp lime juice
> 4 whole-wheat buns, toasted
> 8 leaves green leaf lettuce
> 1 large tomato, sliced

In a large nonstick skillet, heat the oil on medium-high. Season both sides of the fish with the Cajun seasoning, salt, and pepper. In batches if needed, cook 2–3 min. per side, until fish is lightly browned and cooked through. Transfer to a plate.

Meanwhile, in a food processor, combine the red pepper, mayonnaise, paprika, and lime juice. Season with salt and pepper. Pulse until smooth.

Cut fish into 4 pieces to fit buns, if needed. Assemble sandwiches with the buns, fish, red pepper mayo, lettuce, and tomato.

Tips

Substitute any white, flaky fish for the flounder in this recipe.
