> 3 (1 oz) pkgs Nature's Promise® Freeze-Dried Strawberries, divided
> 1 (15.25 oz) box angel food cake mix
> 1/3 cup canola oil
> 2 large eggs
Add 2 pkgs freeze-dried strawberries to a spice grinder, coffee grinder, or food processor. Pulse until finely ground into a powder. To a large bowl, add powdered strawberries, cake mix, oil, and eggs. Stir to combine into a smooth dough. Cover with plastic and refrigerate 30 min.
Preheat oven to 325°F. Line 2 cookie sheets with parchment. Scoop cookie dough into 1-inch balls. (If dough is too soft to handle, refrigerate longer.) Place on prepared baking sheets, about 2 inches apart. Top cookies with remaining 1 pkg freeze-dried strawberries, placing 1 whole strawberry on top of each cookie.
Bake cookies 10–12 min., until tops are lightly browned. Cool 1 min. before transferring to wire rack to cool completely. Store in an airtight container for up to 5 days.
