> 1/4 cup pine nuts
> 4 bagels
> 1 lemon
> 1/2 cup packed basil
> 1/3 cups extra virgin olive oil
> 12 oz mixed color cherry tomatoes
> Nature's Promise olive oil spray
> 1/2 tsp salt
> 8 oz fresh mozzarella
> 1 cup spring mix salad greens
Heat a frying pan without oil or butter and toast the pine nuts 3 min. on medium heat, shaking frequently to avoid scorching the nuts. Let cool on a plate. Meanwhile, split and toast the bagels and zest and juice the lemon.
Purée the basil, olive oil and 2 tbsp lemon juice in a mini food processor or blender. Season with salt and pepper. Halve the tomatoes. Spray a frying pan with olive oil spray and sauté the tomatoes 3 min., cut side down, over medium heat. Remove the pan from the heat, toss the tomatoes with the lemon zest and sea salt and season with pepper.
Tear the mozzarella into small pieces. In a bowl, toss together the tomatoes, mozzarella and pine nuts. Divide the spring mix greens among 4 bagel halves, top with the cheese mixture and sprinkle with basil oil. Top with remaining bagel halves and serve with extra basil oil.
