1 (8.5 oz) box cornbread mix

1 jalapeño

1/4 cup milk

1/4 cup light sour cream

1 egg

1 cup sharp cheddar cheese

Preheat oven to 350F and grease a mini muffin pan. Seed and finely dice the jalapeño.

In a large bowl, mix together cornbread mix, milk, sour cream and egg until well combined. Fold in the diced jalapeno and cheese.

Using a tablespoon as a measure, spoon the batter into the mini muffin tin. Bake for 20 min. or until muffins are golden brown on top and a toothpick inserted into the middle comes out clean. Serve warm with butter and a drizzle of honey.
Tips
Substitute half or all of the cheddar with Monterey Jack.
