Chocolate-Coconut Energy Bars

These are completely addictive. Because coconut oil melts at room temperature, keep these chilled until right before eating.

Ingredients

> 20 dried dates
> 1/4 cup whole almonds
> 1 tbsp mini chocolate chips
> 2 tbsp coconut oil
> 1 tbsp unsweetened shredded coconut
> 1 brown rice cake, crumbled

In a food processor, grind the dates for 1 min. until they form a paste. Transfer to a bowl. Add the almonds and chocolate chips to the food processor and pulse to the consistency of coarse breadcrumbs. Transfer to the bowl with the dates and add the coconut oil, shredded coconut and crumbled rice cake.

Knead until smooth and pat into a 7x4-inch rectangle. Wrap in parchment paper or plastic wrap and chill 30 min., or until set. Cut into 6 bars and store, tightly wrapped, in the refrigerator.
