2 lbs russet potatoes

1 medium yellow onion

2 large eggs

1/2 cup flour

3/4 cup vegetable oil

1/2 tsp baking powder

Preheat the oven to 225°F. Peel the potatoes. Using a box grater, shred the peeled potatoes and onion. Place the potatoes in a kitchen towel and squeeze out any liquid.

In a large bowl, combine the potatoes, onion, eggs, flour, ¼ cup oil, and baking powder. Season with salt (in moderation) and pepper.

In a large skillet, heat remaining ½ cup oil on medium-high. Working in batches, spoon ¼ cup potato mixture into the pan and cook 2–3 min. per side, until golden brown. Transfer latkes to a wire rack set inside a baking sheet and place in oven to keep warm. Repeat with remaining potato mixture, adding more oil to the pan as needed.
