Cod with Pecan Crumble

This dish features three fabulous textures: a crispy pecan top, a flaky fish center, and a fluffy potato-and-bean filling.

Ingredients

> 2 (12 oz) pkgs cod fillet
> 1 (24 oz) pkg Nature's Promise® Yukon Gold mashed potatoes
> 1 (15.5 oz) can cannellini beans, rinsed and drained
> 2 tbsp butter
> 1/2 cup chopped pecans
> 1/2 cup panko 
> 1/2 cup parsley
> 1 lemon
> cooking spray

Preheat the oven to 400°F. While oven preheats, zest the lemon into a bowl and combine with pecans and panko. Halve the lemon and squeeze juice from 1 half into the bowl. Cut the other half into wedges and set aside for later. Add the butter to the nut-panko blend, and mix to combine.

Spray a baking sheet with cooking spray and lay out the cod fillets. Spread the nut-panko mixture evenly over top. Bake for 20 min., or until fish is cooked through and crust is golden brown.

While fish cooks, heat mashed potatoes according to package directions. Mash beans into the potatoes. Chop parsley and fold into the mash. Place the cod on top of the mash, and serve with the lemon wedges.
