Cranberry Grape Tea Bread

A hearty scone-like tea bread studded with tart dried cranberries and juicy seedless grapes. A slice of this bread is perfect as a light breakfast or snack at teatime. Try it toasted with a smear of butter for a treat, as well.

Ingredients

> 2 1/2 cups all-purpose flour
> 3/4 cup sugar
> 3 tsp baking powder
> 1/4 cup canola oil
> 1 cup light sour cream
> 1/4 cup low-fat milk
> 1 egg, beaten
> 2 tsp lemon zest
> 1/2 cup chopped walnuts
> 1/2 cup dried cranberries
> 1 1/2 cups halved California seedless grapes

Preheat oven to 350°F. Oil and flour the bottoms of two 8½ x 4½ x 2½-inch loaf pans. Combine all ingredients except grapes; mix well. Note: batter will be stiff. Gently mix in grapes. Divide the batter evenly between the 2 pans. Bake for 45–50 minutes or until wooden pick inserted near center comes out clean. Cool 5 minutes. Turn out onto wire rack and cool completely before slicing. Each loaf will yield about 16 slices.
