1 (14 oz) pkg mini cucumbers (6 cucumbers)

3 large ripe avocados

6 medium radishes

2 limes

1/4 cup olive oil

2 tsp maple syrup

2 tsp grated peeled fresh ginger

Chopped cilantro, to garnish

Halve the cucumbers lengthwise, then slice into ½-inch-thick half-moons. Halve the avocados lengthwise, remove the pits, and cut into cubes. Trim and thinly slice the radishes. Add cucumbers, avocados, and radishes to a large bowl.

Into a small bowl, grate 1½ tsp zest from the limes and squeeze 3 tbsp juice. Whisk in the oil, maple syrup, and ginger. Season with salt and pepper. Add dressing to bowl and gently toss to combine. Garnish with the cilantro.
