French Toast with Pears and Honey Yogurt

This classic French toast is prepared using olive oil instead of butter.

Ingredients

> 4 eggs
> 2 cups low-fat milk
> ½ tsp ground cinnamon
> ½ tsp vanilla extract
> 2 ripe pears
> 6 slices thick -cut bread, such as challah
> 4 sprigs fresh mint
> 1 cup nonfat plain yogurt
> 1 tbsp honey
> 2 tbsp olive oil

Beat the eggs, milk, cinnamon, and vanilla together in a large bowl. Peel the pears and cut into quarters, then remove the core and cut the quarters into slices. Set aside. Cut the bread slices in half diagonally. Cut the mint leaves into strips. Mix the yogurt, mint, and honey in a small bowl and set aside.

Heat the oil in a skillet. Dip bread slices into the egg mixture and add to skillet (don’t overcrowd the pan). Cook for 4 min., or until golden brown. Flip and cook 3 min., or until both sides are golden brown and crisp. Divide French toast halves among 4 plates (3 pieces each) and top with pears and honey yogurt.
