Ginger-Lemonade Ice Pops

Ingredients

> 2 1/2 cup unflavored coconut water
> 1/2 cup freshly squeezed lemon juice
> 2 tbsp maple syrup
> 1 (3-inch) piece ginger, peeled and roughly chopped
> 1 1/2 tsp ground turmeric

To a blender, add the coconut water, lemon juice, maple syrup, ginger, turmeric, and a pinch of black pepper. Purée 1–2 min., until completely smooth.

Divide mixture evenly among 6 ice pop molds. Insert ice pop sticks. Freeze at least 4 hours or overnight, until solid. Carefully run the molds under warm water to release ice pops.
