2 cups Nature's Promise almond flour

1/4 cup packed dark brown sugar

1/2 tsp baking soda

2 tsp pumpkin pie spice

1/8 tsp salt

1/3 cup unsweetened applesauce

1 large egg, beaten
>
1/2 cup shelled pistachios, coarsely chopped
>
1/3 cup dried cranberries

Preheat oven to 350°F. Line a baking sheet with parchment.

In a large bowl, stir together the almond flour, brown sugar, baking soda, pumpkin pie spice, and salt. Stir in the applesauce and egg. Fold in the pistachios and cranberries.

Using wet hands, scoop and roll dough into 2-inch balls. Arrange on lined baking sheet. Press down to flatten and smooth tops. Bake 12–15 min., until cookie bottoms are golden brown. Cool completely on wire rack.
