Honey-Pecan Encrusted Chicken Strips

Ingredients

> 1 lb Nature's Promise chicken tenders or breast cut into 1-inch pieces
> 1/2 cup orange juice
> 2 tsp Dijon mustard
> 2 tbsp honey
> 1/4 cup pecans
> 1/2 cup toasted bread crumbs
> 1/2 tsp garlic powder
> 1/8 tsp salt
> Cooking spray
> Orange wedges (optional garnish)
> Dipping sauce (if desired)

Preheat oven to 425°F. Cover a baking sheet with aluminum foil and spray with cooking spray. Place pecans in a zip-top bag and crush with a rolling pin to create a crumb texture. Add bread crumbs, garlic powder and salt to bag and shake to distribute. Pour crumbs onto a flat dish. In a bowl, combine honey, Dijon mustard and orange juice. Stir until well combined. Dip chicken piece into the liquid mixture, coating both sides. Let sit 30 seconds (or up to 10 minutes) to absorb the flavors.

One by one, press each chicken strip into the dry mixture to coat. Place onto the baking sheet and spray the tops lightly with cooking spray. Bake for 8-10 minutes or until internal temperature reaches 165°F. Place on a serving plate garnished with orange wedges and serve with dipping sauces, if desired.
