Zucchini-Chocolate Chip Mini Muffins

Zucchini adds moisture while mini chocolate chips add a touch of sweetness to these bite-size breakfast treats.

> 1 medium zucchini
> 3/4 cup flour
> 1 tsp baking soda
> 1 tsp ground cinnamon
> 1/2 cup sugar
> 1 large egg
> 1 tsp vanilla extract
> 1/2 stick butter, melted
> 3/4 cup mini chocolate chips


Preheat oven to 350°F. Use a box grater to grate the zucchini.
In a bowl, combine flour, baking soda, cinnamon, and a pinch of salt. In a separate bowl, whisk together sugar, egg, vanilla, butter, and zucchini. Add flour mixture to the zucchini mixture, gently stirring until fully combined. Fold in chocolate chips.
Using a tablespoon, divide batter between cups in greased mini muffin tin and bake for 15 min. until a toothpick inserted into the center comes out clean.
