3 cups rotisserie chicken shredded

1 (10 oz) can enchilada sauce

1 (8 oz) pkg shredded cheese divided

1 (15.5 oz) can black beans

2 cups fully cooked white rice

6 soft tortillas
Steps

Preheat oven to 350°F.

Layer chicken, rice, beans, portioned cheese, and enchilada sauce on soft tortilla.

Roll the tortillas and place in baking dish.

Top the rolled enchiladas with remaining cheese and bake until cheese is bubbly, about 20 minutes.
Tips
• Swap out chicken with shredded pork, beef, salmon or tofu.
• Add fresh vegetables for more nutrition.
• Use a Picante salsa in place of enchilada sauce.
• Mix it up by using Monterey jack, cheddar, smoked provolone or Gouda cheese.
