1 small apple

3 sheets kosher for Passover matzo, broken into 1-inch pieces

2 large eggs

1/3 cup sugar

3 tbsp olive oil, plus more for greasing

3/4 tsp ground cinnamon

1/4 tsp salt

1/4 cup walnuts, chopped

1/3 cup golden raisins

Preheat oven to 350°F. Lightly grease insides of four (6 oz) oven-safe ramekins with some olive oil. Peel, core, and finely chop the apple. In a medium bowl, soak the matzo in cool water until soft but not falling apart, about 2–3 min.

In another medium bowl, whisk the eggs, sugar, oil, cinnamon, and salt. Drain matzo well, pressing out any excess liquid, and add to egg mixture along with apple, walnuts, and golden raisins. Stir until well combined.

Divide mixture among greased ramekins. Place ramekins on a baking sheet and place in oven. Bake 25–30 min., until set. Serve warm or at room temperature.
Tips
No ramekins, no problem. Place mixture in a lightly greased 1-qt baking dish and bake at 350°F for 40 min., until set.
