Italian Picnic Tuna and Veggie Wraps

Great for quick lunches or picnics, these tuna wraps are high in protein and stuffed with veggies like onion, peppers, and arugula.

Ingredients

> 1 small red onion
> 1/4 cup apple cider vinegar
> 1 (12 oz) jar  fire-roasted red peppers
> 2 (5 oz) cans tuna packed in water
> 1 cup pitted green olives
> 4 (8-inch) flour tortillas
> 2 cups arugula

Steps

Peel the red onion and cut into thin rings. Set in a shallow bowl with the apple cider vinegar. Meanwhile, drain the roasted red peppers and cut into thin strips. Drain the tuna well. Coarsely chop the olives.

Heat the tortillas in the microwave according to package directions to soften. Remove onions from vinegar.

Divide onions, peppers, tuna, and arugula evenly among the tortillas. Fold both sides of the tortilla towards the center. Tightly roll the bottom of the tortilla up towards the top, until completely wrapped. Slice on the diagonal before serving.
