Ingredients

1 inch fresh ginger, peeled and grated

1 lemon, juiced

2 tbsp peanut butter

1 tbsp soy sauce

10 oz chicken breast
>
18 oz mie or ramen noodles

7 oz snow peas
>
1 cucumber, sliced into 1/4-inch slices
>
3 green onions, chopped
>
1 cup cilantro, coarsely chopped
>
3 tbsp unsalted peanuts coarsely chopped

Mix the ginger with the lemon juice, peanut butter, soy sauce and 4 tbsp water until the consistency is smooth.

Bring a pot of lightly-salted water to a boil. Add the chicken and poach for 20 minutes.

Meanwhile cook the noodles in salted water for 8 minutes (or according to package directions). Drain and cool under cold running water.

Cook the snow peas for 3 minutes or until al dente. Drain and cool under cold running water.

Mix the dressing with the noodles and add salt and pepper, to taste.

Cut the cooked chicken breasts into slices.

Mix the snow peas, cucumber, spring onion, chicken and cilantro together. Sprinkle with peanuts.
