One-Bowl Pumpkin Bread with Chocolate Chunks

Plenty of chocolate chunks and a pumpkin-spiced sugar topping make this easy pumpkin bread a must for fall. Thick slices are perfect for a quick breakfast or a satisfying snack.

Ingredients

> cooking spray
> 1 cup canned pumpkin puree
> 3/4 cup granulated sugar
> 1/2 cup vegetable oil
> 2 large eggs, at room temperature
> 1 tsp vanilla extract
> 1 3/4 cups all-purpose flour
> 3 tsp pumpkin pie spice, divided
> 1 tsp baking soda
> 1/4 tsp salt
> 1 cup chocolate chunks or chocolate chips
> 1/4 cup Nature's Promise ® Raw Cane Turbinado Sugar or light brown sugar

Preheat oven to 350°F. Grease a 9x5-inch loaf pan with the cooking spray. In a large bowl, combine the pumpkin purée, granulated sugar, oil, eggs, and vanilla. Stir until smooth.

To bowl, add the flour, 2 tsp pumpkin pie spice, baking soda, and salt. Gently fold in dry ingredients until just combined. Add the chocolate chunks and gently stir until evenly incorporated. Transfer batter to prepared loaf pan.

Thoroughly wash and dry mixing bowl. In bowl, combine the turbinado sugar and remaining 1 tsp pumpkin pie spice. Sprinkle on top of batter, pressing slightly to adhere. Bake 55–65 min., until a toothpick inserted into center comes out clean. Let cool completely.

Tips

You can stir remaining pumpkin purée into pancake batter or a fall chili.
