Ingredients

1 lb onions

1/2 cup fresh thyme

4 tbsp butter

2 tbsp olive oil

2 tbsp minced garlic
>
3 cups vegetable broth
>
1 (9 oz) pkg cheese tortellini
>
1/4 cup shredded Parmesan cheese
Steps

Cut the onion into thin rings and pick the leaves from the thyme.

Heat the butter and oil in a large, heavy pot. Add the onions, garlic, and thyme.

Cook, stirring occasionally, for 5 min. or until onions are soft and begin to caramelize.

Add the broth plus 3 cups water and bring to a boil. Reduce the heat and simmer for 10 min. Season with salt and pepper.

Add the tortellini and cook for 5 min. or until tender. Divide the soup evenly among 4 bowls and top with shredded Parmesan cheese.
