Pasta with Bacon and Creamy Carrot Sauce

Carrots are the secret star of this easy 5-ingredient recipe. Savory bacon and fresh dill finish off this pasta, which is perfect for a weeknight dinner.

Ingredients

> 1/2 (2.1 oz) pkg fully cooked bacon
> 1 lb carrots
> 1 (16 oz) pkg orecchiette
> 1/4 cup grated Parmesan cheese, plus more to garnish
> 1/4 cup chopped dill, to garnish

Microwave the bacon according to package directions. Let cool slightly, then crumble. Meanwhile, bring a large pot of salted water to a boil on high. Peel and cut the carrots into 2-inch pieces. Add to pot and cook 10–12 min., until softened. Using a slotted spoon, transfer carrots to a blender.

Return water to a boil over high heat. Add the orecchiette and cook 9–11 min., until al dente. Reserve 1 cup pasta cooking liquid. To blender with carrots, add pasta cooking liquid, and the Parmesan. Season with salt and pepper. Purée until smooth.

When pasta is cooked, drain well and return to pot. Toss with carrot sauce and season with salt and pepper. Top with crumbled bacon, dill, and more Parmesan.
