4 (10-inch) whole-wheat or sun-dried tomato basil tortillas

3/4 cup Nature's Promise® Roasted Red Pepper or Garlic Hummus

1/2 (12 oz) pkg rainbow slaw
>
1/2 (5 oz) pkg fresh baby spinach
>
2 tbsp olive oil
>
1 tbsp apple cider vinegar
>
1 cup roasted red pepper slices

Wrap the tortillas in a damp paper towel and microwave 10–20 sec. on high, until warm. Onto each tortilla, spread 3 tbsp hummus.

In a medium bowl, combine the rainbow slaw, spinach, oil, and vinegar. Season with salt and pepper. Top hummus with slaw mixture, leaving about a 2-inch rim. Layer the red pepper slices on top of slaw.

Tightly roll tortillas and press down to seal. Cut into 2-inch pieces and serve.
