Roast Pork Loin with Caramelized Onions

Serve up something different for Easter dinner this year and try this roast pork loin with caramelized onions instead of the yearly ham. Pork loin cooks up moist and tender in just about an hour while the onions caramelize.

Ingredients

> 2 1/2 lb center cut pork loin roast
> 1/2 tsp salt
> 1/2 tsp cracked black pepper
> 1/4 tsp dried thyme
> 1 tsp canola oil
> 1 tsp butter
> 1 large sweet onion, peeled and thinly sliced

Preheat oven to 375F. Place pork in a lightly oiled ovenproof dish. Sprinkle with salt, pepper and thyme. Roast for 50-60 minutes or until internal temperature reaches 160F.

While pork is roasting, heat oil and butter in a skillet over medium heat. Add onions and cook until onions become soft. Continue to cook, stirring, until evenly brown.

Remove pork from oven and allow to rest 10 minutes before slicing. Surround pork slices with cooked onions.
