Shrimp Cocktail with Avocado and Cilantro

A south-of-the-border makeover adds a little zest to the classic recipe.

Ingredients

> 1 lime
> 1 tbsp honey
> 1 tsp dried red chili flakes
> 1 tbsp sesame oil
> 1/2 cup finely chopped fresh cilantro
> 2 avocados
> 1 lb frozen cooked large shrimp peeled and deveined, thawed
> 4 butter lettuce leaves

Steps

Zest and juice the lime. Mix the zest and juice with honey, chili flakes, sesame oil and cilantro. Season with salt and pepper to taste.

Halve the avocados, remove the pits and scoop them out of their shells with a large spoon Cut into cubes. In a large bowl, mix together the avocado, shrimp and dressing. Place lettuce leaves on 4 small plates. Spoon the shrimp cocktail onto lettuce leaves and serve.
