Ingredients

> 2 apples
> 1 (16 oz) loaf cinnamon swirl bread
> 3 large eggs
> 1/4 cup light brown sugar
> 1 tsp cinnamon
> 1 cup low-fat milk
> 1/2 cup half and half
> 1 tsp vanilla extract
> 1 cup dried cranberries
> Cooking spray
> Vanilla ice cream

Peel and core the apples. Cut into ¼-inch pieces. Slice the bread.

In a large bowl, whisk the eggs, brown sugar, and cinnamon until smooth. In a separate bowl, whisk the milk, half and half, and vanilla extract and add to the egg mixture, along with the apples and cranberries. Toss until well combined.

Spray the insert of a 7-quart slow cooker with cooking spray. Arrange bread in slow cooker. Pour egg mixture over bread and cover. Cook on low 3 hours, until set. Scoop into serving bowls and serve with ice cream, if desired.
