Ingredients

1 tsp canola or olive oil

1/2 cup chopped onion

1 clove garlic, crushed
>
1/2 red bell pepper, finely chopped (3/4 cup)
>
10 oz frozen succotash (or 1 cup each corn and lima beans)
>
1 tsp chopped fresh parsley
>
1/4 tsp salt
>
Ground black pepper to taste
>
tabasco or hot sauce to taste (optional)
Steps

Heat oil in a skillet over medium heat.

Add chopped onions and garlic; cook until slightly soft, about 2 minutes.

Add red pepper, corn and lima beans. Cover and cook for 5 minutes or until vegetables are soft.

Stir in parsley. Add salt and pepper to taste. Season with Tabasco or hot sauce if desired.
