Pull together this spicy vegan side dish in less than ten minutes. Chopped onions and garlic sauté until fragrant to make the base for the lima beans, red pepper and corn, while hot sauce gives it a finishing kick and a lot of flavor.

Ingredients

> 1 tsp canola or olive oil
> 1/2 cup chopped onion
> 1 clove garlic, crushed
> 1/2 red bell pepper, finely chopped (3/4 cup)
> 10 oz frozen succotash (or 1 cup each corn and lima beans)
> 1 tsp chopped fresh parsley
> 1/4 tsp salt
> Ground black pepper to taste
> tabasco or hot sauce to taste (optional)

Heat oil in a skillet over medium heat.

Add chopped onions and garlic; cook until slightly soft, about 2 minutes.

Add red pepper, corn and lima beans. Cover and cook for 5 minutes or until vegetables are soft.

Stir in parsley. Add salt and pepper to taste. Season with Tabasco or hot sauce if desired.
