Sweet-and-Sour Meatballs with Sugar Snap Peas

An easy homemade sweet-and-sour sauce, store-bought turkey meatballs, and stir-fried snap peas become a 15-minute crowd-pleasing dinner. Winner, winner, turkey meatball dinner!

Ingredients

> 1 (24 oz) pkg frozen fully cooked turkey meatballs, thawed
> 1 (14 oz) can Nature's Promise ® Pineapple Chunks in Juice
> 1 tbsp cornstarch
> 2 tbsp ketchup
> 2 tbsp white vinegar
> 1 tbsp reduced-sodium soy sauce
> 1/2 tsp garlic powder
> 1 tbsp canola oil
> 1 (15 oz) pkg fresh sugar snap peas
> 2 (8.8 oz) pkgs Nature's Promise ® Precooked Jasmine Rice
> 2 tbsp chopped green onion

In a microwave-safe bowl, microwave the meatballs 2–3 min., until warmed through. Meanwhile, drain ½ cup pineapple juice from the can into a small bowl. (Reserve remaining juice for another use.) To bowl, stir in the cornstarch until dissolved. Add the ketchup, vinegar, soy sauce, and garlic powder and stir to combine. Season with salt and pepper.

In a 12-inch skillet, heat the oil on high. Add the snap peas and cook 5–6 min., until softened. Add sweet-and-sour sauce to skillet. Reduce heat to medium-high. Cook 2–3 min., until the sauce begins to simmer, stirring.

Add meatballs and the pineapple chunks to skillet and cook 2–3 min., until warmed through, stirring occasionally. Season with salt and pepper. Microwave the rice according to package directions. Serve meatballs over rice and garnish with the green onions.
