Turkey Bahn Mi with Quick Pickled Vegetables

Ingredients

> 1 tsp iodized salt
> 1 tbsp sugar
> 1/2 cup rice vinegar
> 1/2 cup matchstick cut carrots
> 1/2 cup bean sprout
> 4 (6 inch) French bread rolls
> 1/4 cup prepared spicy mayonnaise
> 1 lb thinly sliced Taste of Inspirations Thai Chili Seasoned Turkey Breast
> 2 mini cucumbers
> 1/4 cup fresh cilantro leaves

Steps

Make the quick pickled veggies by whisking together the salt, sugar, and vinegar in a large bowl. Add the matchstick carrots and bean sprouts and toss to coat. Set aside and let marinate for 10 minutes.

Meanwhile, split the French rolls and spread with the spicy mayo on both sides of the bread. Layer in the sliced Thai turkey.

Top the turkey with the pickled carrots and bean sprouts. Thinly slice the cucumbers and divide them on top of the vegetables. Garnish with fresh cilantro leaves.
