Vanilla Wafer Sandwich Cookies

Upgrade store-bought wafer cookies with a simple hack: Spread strawberry jam between cookies, then dip them in melted chocolate and sprinkle with decorations for gift-worthy goodies. Change up the cookies with fun fillings like dulce de leche or chocolate-hazelnut spread.

Ingredients

> 40 Nabisco Nilla Wafer Cookies, divided
> 1/4 cup strawberry jam (or other fillings like dulce de leche, chocolate-hazelnut spread, cookie butter, marshmallow creme, etc.)
> 1/2 semisweet chocolate chips
> 2 tsp canola oil, divided
> 1/2 cup white chocolate chips
> Red and green sanding sugar, nonpareils, and holiday sprinkles, to decorate

Line a baking sheet or large plate with parchment. Add half the cookies to prepared baking sheet. Spread ½ tsp jam (or fillings of choice) onto flat side of each cookie, then top with remaining cookies, flat-sides down. Freeze sandwiches 15 min.

In a small microwave-safe bowl, combine the semisweet chocolate chips and 1 tsp oil. Microwave in 30-sec. increments, stirring between each interval, until smooth and melted. Repeat with white chocolate chips and remaining 1 tsp oil. Remove sandwiches from freezer.

Dip half of each sandwich into melted chocolate (alternating between semisweet and white), allowing excess to drip off, and return to parchment. Decorate with the sanding sugar, nonpareils, and sprinkles, if desired. Freeze 15 min., until chocolate is set. Store leftovers in an airtight container in the refrigerator for up to 5 days.
