Vegan Caesar Salad

Store-bought hummus is the secret ingredient in this tasty vegan Caesar dressing that whisks up in minutes.

> 1/2 cup Nature's Promise® Organic Roasted Garlic Hummus
> 3 tbsp lemon juice
> 1/2 tsp Dijon mustard
> 1/4 tsp low-sodium soy sauce
> 1 tbsp finely chopped capers
> 1 (3 count) pkg romaine lettuce heart
> 1 tbsp Nature's Promise® nutritional yeast (optional)
> 1 cup herb seasoned croutons


To a large bowl, add the hummus, lemon juice, mustard, soy sauce, and capers. Season with salt and pepper. Whisk to combine. If dressing is too thick, add warm water, 1 tbsp at a time, to thin it out. Set aside.
Chop the lettuce into 1-inch pieces. Add lettuce to bowl with dressing, tossing to coat. Top with the nutritional yeast, if desired, and croutons.
