This quick Vietnamese salad is a great no-cook dinner or lunch. The salad combines fresh veggies, a tangy lime dressing, and chopped beef jerky with peanuts and basil for extra flavor and crunch.

Ingredients

> 2 cloves garlic, minced
> 1 tsp sugar
> 1/4 cup fresh lime juice
> 2 tbsp fish sauce or reduced-sodium soy sauce
> 2 plum tomatoes
> 1 (10 oz) bag Nature's Promise ® Organic Green Beans
> 1 (10 oz) bag Nature's Promise ® Organic Vegetable Slaw
> 1 (2.5 oz) pkg Country Archer ® Beef Jerky, such as Original or Mango Habanero
> 1/4 cup sliced basil leaves
> 1/4 cup finely chopped peanuts

In a large bowl, whisk the garlic, sugar, lime juice, and fish sauce until sugar dissolves.

Core the tomatoes and coarsely chop. Cut the green beans into 1-inch pieces. Add tomatoes, green beans, and the vegetable slaw to bowl with dressing. Season with salt and pepper and stir to combine. Let stand at room temperature 10 min.

Meanwhile, chop the beef jerky into ½-inch pieces. Before serving, add the basil, peanuts, and beef jerky to the salad and toss to combine.
