Waffles with Maple Apples

A blender batter brings these fall-inspired waffles together in no time. Top off with maple-sweetened sautéed apples for a breakfast everyone will love.

Ingredients

> 2 Honeycrisp apples
> 3 tbsp butter
> 1/2 cup maple syrup
> 1/4 tsp pumpkin pie spice
> 2 cups low-fat buttermilk
> 1/4 cup canola oil
> 3 large eggs
> 1 3/4 cups all-purpose flour
> 1/4 cup ground flaxseed
> 2 tbsp sugar
> 2 tsp baking powder
> 1/2 tsp baking soda
> 1/4 tsp salt

Core and thinly slice the apples. Melt the butter in a 10-inch skillet over medium heat. Add apples and sauté 8–10 min., until tender, stirring occasionally. Stir in the maple syrup and pumpkin pie spice. Remove from heat.

Meanwhile, preheat a greased waffle iron on medium. In a blender, purée the buttermilk, oil, eggs, flour, flaxseed, sugar, baking powder, baking soda, and salt until combined. Spoon some batter into waffle iron. Cook 4–5 min., until golden brown and crisp. Repeat with remaining batter.

Reheat apple mixture, if desired. Spoon over waffles to serve.

Tips

Keep waffles warm on a baking sheet in a 225°F oven.
