Grilled Balsamic Chicken with Peaches

Ingredients

> 1 (4 - 5 lbs) boneless skinless chicken breasts value pack
> 1/3 cup olive oil
> 1/3 cup balsamic vinegar
> 2 tbsp Dijon mustard
> 6 peaches
> 1 tbsp chopped chives

Season the chicken with salt and pepper. In a large bowl, whisk together the oil, vinegar, and mustard. Reserve 2 tbsp marinade for later. To bowl, add chicken and turn to coat. Cover bowl with plastic wrap and marinate in the refrigerator for 30 min. or up to overnight.

Set grill to medium. Transfer chicken to the grill and discard marinade. Cover chicken and cook, turning once, 15–20 min., until chicken is cooked through. Transfer to a platter.

Halve each peach and remove pits. Brush peaches with reserved marinade, then season with salt and pepper. Add peaches to grill. Cook 3–4 min. per side, until lightly charred, turning once. Serve grilled chicken with peaches and garnish with chives to serve.
