Four-Ingredient Oat Waffles

Four ingredients and a blender method make these waffles especially easy. Cottage cheese becomes wonderfully smooth as the batter blends and adds protein.

Ingredients

> 6 large eggs
> 2 cups old-fashioned oats
> 2 cups fat-free cottage cheese
> 1/2 tsp vanilla extract

Preheat a greased waffle iron on medium. In a blender, purée eggs, oats, cottage cheese and vanilla until smooth.

Spoon some batter into waffle iron. Cook until golden brown and crisp, 4–5 minutes. Repeat with remaining batter. Serve immediately.

Tips

Set up a waffle bar and let everyone choose their own toppings like berries, bananas, honey, syrup or peanut butter.
