Sheet Pan Fish and Chips

Old Bay seasoning, creamy mayonnaise, and crispy bread crumbs turn frozen fish fillets into the ultimate sheet-pan dinner, complete with a side of shoestring fries. Don’t forget the dill and a squeeze of lemon for a bright finish.

Ingredients

> 1/3 (32 oz) pkg frozen wild-caught skinless, boneless flounder fillets (4 fillets)
> 1/2 (28 oz) bag frozen shoestring French fries
> 1 tsp Old Bay seasoning, divided
> 1/4 cup mayonnaise
> 1/2 cup panko bread crumbs
> 2 tbsp chopped dill, to serve
> Lemon wedges, to serve

Preheat oven to 425°F. Line a large rimmed baking sheet with parchment. Add the frozen flounder pieces to center of baking sheet and spread the fries in an even layer around fish. Season fish with salt, pepper, and ½ tsp Old Bay. Spread mayonnaise on top of each fish piece, then top with the bread crumbs. Sprinkle remaining ½ tsp Old Bay on fries.

Bake 20–25 min., until fries are crispy and flounder is cooked through. If desired, flip fries halfway through baking time. Garnish with the dill and serve with lemon wedges.
