1 3/4 cups cottage cheese

1 cup flour

2 large eggs

2 tbsp peanut oil

1 cup strawberries

2/3 cup Greek yogurt

4 tbsp honey

Mix the cottage cheese, flour, and eggs in a bowl to form a batter. Heat half the oil in a large frying pan. Scoop up to 4 mounds of batter into the pan at a time, and cook for 3 min, covered. Flip, then fry the pancakes, uncovered on low heat, for 3 min., or until golden brown. Repeat with remaining oil, making 2 per person.

Meanwhile, halve the strawberries. Divide the pancakes, strawberries, and yogurt among 4 plates. Serve with a drizzle of honey.
