How I Fell in Love With Radishes, and Why You May Too  

This underrated vegetable deserves a spot in your spring cooking

Growing up, the only time I ever encountered radishes was sliced raw over a side salad at dinner time. While they do bring a nice crunch, I always found the thick slices of radish were a little too powerful for my taste, so radishes weren’t really an ingredient I kept on hand. But everything changed the moment I tried a cooked radish for the first time, and I finally understood how to best enjoy them.  

During the COVID-19 pandemic, availability at my local supermarket was low. So, I was forced to experiment with some new ingredients that I could access. When I came home one day with a big batch of radishes, I had to get creative. That’s when I found a radish recipe to sauté them in butter, a squeeze of lemon, and whatever spices I had on hand until they were tender. The cooked radishes were an absolute revelation—none of the intensely bitter or peppery bite I didn’t like. They quickly soaked up all of the butter and spices, becoming juicy and sweet.   

My favorite way to enjoy them is still cooked—usually sautéed with butter or roasted with olive oil. I add them to any sheet pan or stir-fry for some heft and nutrients. But now, I’ll even eat radishes raw. Their dominant flavor profile plays best alongside fat or acidic flavors to help cut some of the intensity down. Dipped in butter, sliced on toast with cream cheese, or added to a salad (sliced super thin) with a very bright dressing became my go-to raw preparations. You can almost always find my fridge stocked with radishes, especially in the spring when they are at their best.

Butter and radishes are a match made in heaven, but roast them with extra herbs and juicy chicken for the ultimate sheet pan dinner. Crispy Pork Chops with Spring Salad  

Nothing says spring more than a cozy and crispy pork chop alongside a bright and fresh salad. Radishes and sugar snap peas bring a beautiful crunch to this easy dinner, and the lemony-mustard dressing tones down any bitterness for a simple and flavorful meal.

Roasted Beets and Radishes with Dill and Feta   

Roasting radishes brings out the sweetness of the vegetable, tames any peppery flavors, and creates a creamy texture. This recipe pairs radishes with roasted beets, creamy feta, and bright dill for a spring side you’ll turn to again and again.

Sauteed Radishes and Sugar Snap Peas   

When I don’t want to turn my oven on, but I want the soft and sweet pops of spring radishes, I always break out the sauté pan. The best part—cooking radishes on the stovetop helps them stay extra juicy instead of drying out a smidge like in the oven. This recipe pairs them with butter (always a good duo), a splash of white wine for brightness, and crisp sugar snap peas for sweetness.

Spicy Pickled Radishes and Cucumbers   

I love to maintain the natural crisp of radishes, while taming some of that bitterness. Pickling radishes does just that! I add them to everything in the spring—over eggs, on sandwiches, or to top bowls. It brings a bright acidity and great texture to everything on my spring menus.
