Chicken Salad BLT Sandwiches

Mix up a simple homemade chicken salad made with rotisserie chicken, then load it on toasted bread with crisp bacon, lettuce, and tomato slices for a satisfying 15-minute meal that brings together the best of both worlds. They’re also perfect for a picnic lunch!

Ingredients

> 4 slices fully cooked bacon
> 1 1/2 cups shredded rotisserie chicken
> 1/4 cup mayonnaise, plus more for bread if desired
> 1 tsp Dijon mustard
> 1/4 cup finely chopped celery
> 1 tbsp finely chopped green onion
> 4 slices multigrain bread
> 2 large lettuce leaves
> 1 medium tomato, sliced

Microwave the bacon according to package directions. Allow to cool slightly. Meanwhile, in a medium bowl, combine the chicken, mayonnaise, Dijon, celery, and green onion. Season with salt and pepper.

Lightly toast the bread and spread a thin layer of mayonnaise on one side of bread slices, if desired. Divide chicken salad between 2 bread slices and top with bacon, lettuce leaves, and tomato slices. Top with remaining bread slices, mayo-sides down. Cut in half to serve.
